Крафт е изкуството да създаваш бира и умението да й се насладиш.
Крафт е занаят, за който не са нужни индустриални заводи, хиляди тонове суровини или разточителни рекламни кампании. Напротив, това, което е нужно, са просто две ръце и един човек, който истински обича това, което прави.
Крафт бирите се отличават с богат и разнообразен букет от вкусове и аромати. Водата, малцът, хмелът и маята, са задължителни елементи, но комбинациите помежду им са безгранични.
Преди всичко друго, Крафт е и култура на отговорна и качествена консумация. Често Крафт бирата е идеална добавка в съчетание с различни ястия и хапки. Комбинацията от двете разкрива нови вкусове и разгръща пълния им потенциал.
- Разкажи ни с какво се занимавате.
- Нашата компания е start-up в областта на търговията. Аз и хората около мен сме големи ентусиасти пивовари, а някои се занимават и на професионално ниво. Имаме по-широк поглед върху бирата и истинското й стилово многообразие.
Решихме да създадем и да развием една култура на консумация на по-различни, по-качествени продукти. Както виното не е нито бяло, нито червено, така и бирата не е просто светла и тъмна. Има широко стилово многообразие, част от което преди няколко седмици започнахме да внасяме от два баварски производителя. Едната пивоварна е голяма и позната на любителите, а другата е по-бутикова. - Освен онлайн, къде можем да намерим продуктите ви?
- В следните заведения: "Строежа", Kanaal, Roderik, "Билкова", Soul Kitchen, "Трикракото пиле", "Магданоз", Amsterdam и Swinging hall. Правим опознавателни събития, където разказваме за крафт бирата - алтернативата на масовото, пошлото, евтиното. Засега можете да ни откриете само в София, но ще се опитаме да обхванем и зимните курорти.
- Защо точно бира?
- Нещата започнаха преди няколко години, когато бях на студентска бригада в Щатите. Там е силно развит бизнес моделът за производство на крафт бира и има много регионални пивоварни, които са във възход и правят оригинални експериментаторски бири. Когато за първи път се сблъсках с това, ми стана интересно. Намерих си една малка черна работа в местната пивоварна. Така от чирак стигнах до калфа, а дано и до майстор един ден. Занимавах се непрофесионално, просто защото ми беше присърце.
Бил съм в Италия, Германия, Швейцария пак за да се уча. Общо взето, като влезеш в тези среди, където всички са ентусиасти, контактите се получават много лесно. Когато се върнах преди година, имах желанието да основа собствена търговска марка, но се оказа, че в България това е свързано с доста препятствия, нелоялна конкуренция, както и пари.
Покрай един интернет форум се запознах с ентусиасти домашни пивовари в България. Направихме си асоциация на домашните пивовари. Събираме се, обменяме идеи, пием, ядем. (Смее се).
Всъщност направата на домашна бира не е толкова трудна, може би една идея по-трудно, отколкото да направиш вино, защото процесът е по-особен. Но в крайна сметка това отново е вино - малцово, а не плодово.
- Какви бири предлагате?
- Едните пивовари са Camba Bavaria, които са доста мънички с няколко вида ейл, IPA и стаут, стилове, които трудно се намират в България, а другите са Schneider Weisse с богата гама от класически немски пшеничени бири, които обаче са получили занаятчийско докосване и нов прочит.
- Какви са цените им?
- Малко по-високи, но това е във закономерност с качеството по отношение на суровините и продуктите, вложени в тях. Повечето са с по-висок алкохолен градус, по-плътни, по-горчиви.
- От всички места, където си бил, къде си опитвал най-хубавата бира?
- Най-хубавата, която съм пил, си е моята домашна бира. (Смее се). Иначе е доста субективно. Аз си падам по по-силно охмелените, горчиви бири. Бих препоръчал светлия ейл.
